Thanksgiving in Northern Thailand.
One of our family traditions is scalloped oysters. Having grown up on the eastern coast of the US we always had oysters in abundance during the holiday season. Scalloped oysters always being one of the offerings. Oysters here are wonderful and inexpensive - saltines (the other necessary ingredient) are not. But in my search for alternate crackers I have found no adequate substitute. I did have to refer to the Joy of Cooking to be reminded of the proportions of saltines to oysters as I only make this dish twice a year - Thanksgiving and Christmas. I was not disappointed. But I would also love to hear from anyone who has expanded on Irma's tried and true recipe (I did not include nutmeg).
